My wife, Faith, is nuts about nuts. She spends a small fortune each month on flavored cashews and such, so I thought “Hey, I can make these at home!” So, for far less money than buying roasted chile-lime cashews at the store, here’s how to make this great snack at home.
Ingredients:
¼ cup lime juice
2 Tbsp chili powder
A pinch of cayenne pepper, or to taste
½ tsp. salt
2 cups raw, unroasted cashews
Method
- Preheat the oven to 250F.
- In a bowl, whisk the lime juice, chili powder, cayenne, and salt together.
- Add the raw cashews to the bowl and toss with the lime juice mixture until they’re well coated.
- Spread the cashews into a single layer onto a baking sheet lined with parchment paper or a Silpat, making sure to scrape out as much of the lime juice mixture as possible. Bake for 60-90 minutes, stirring every 15-20 minutes so that they cook evenly.
- Let the nuts cool at room temperature and enjoy!
