Roasted Chile-Lime Cashews

This popular snack is easy to make at home, and cheaper too. All it takes is just five ingredients and time in the oven.

My wife, Faith, is nuts about nuts. She spends a small fortune each month on flavored cashews and such, so I thought “Hey, I can make these at home!” So, for far less money than buying roasted chile-lime cashews at the store, here’s how to make this great snack at home. 

Ingredients:

¼ cup lime juice

2 Tbsp chili powder

A pinch of cayenne pepper, or to taste

½ tsp. salt

2 cups raw, unroasted cashews

Method

  1. Preheat the oven to 250F.
  2. In a bowl, whisk the lime juice, chili powder, cayenne, and salt together.
  3. Add the raw cashews to the bowl and toss with the lime juice mixture until they’re well coated.
  4. Spread the cashews into a single layer onto a baking sheet lined with parchment paper or a Silpat, making sure to scrape out as much of the lime juice mixture as possible. Bake for 60-90 minutes, stirring every 15-20 minutes so that they cook evenly.
  5. Let the nuts cool at room temperature and enjoy!
