At my local Winco this week I came across frozen Manila steamer clams with garlic and butter in the seafood section of the store. I hadn’t seen these before. They are clams in the shell that you simply cook in the bag they come in from frozen. You can put the bag in boiling water or heat them in the microwave until the clam shells open up. It’s pretty cool and convenient. So I decided to use a bag of steamer clams with garlic and butter to make linguine with clams. It turned out great.
Ingredients:
- 1 lb. bag frozen steamer clams in garlic butter (such as Pacific Seafood)
- 12 oz. dried linguine pasta
- Juice of 1 lemon
- Dried chili flakes, to taste
- Freshly ground black pepper, to taste
- ¼ cup minced basil or Italian parsley
- Grated Parmigiano-Reggiano cheese
Method
- Cook the linguine according to package directions until just al dente. Drain and set aside.
- Cook the steamer clams according to package directions until the shells open.
- In a large bowl, pour the cooked clams, chile flakes and black pepper to taste, and lemon juice over the linguine and toss well.
- Sprinkle the pasta and clams with basil or parsley.
- Serve with Parmigiano-Reggiano.
