French Toast for One

French toast for breakfast every now and then is so easy to make. Here is a recipe for French toast for one person, but you could easily increase the amounts of the ingredients to make it for two, four, etc.

Ingredients:

  • 1 egg
  • ½ cup milk (use whole, skim, soy, almond, or coconut)
  • ¼ tsp. vanilla extract
  • ¼ tsp. sugar
  • Pinch of ground cinnamon
  • 2 slices bread
  • 1 Tbsp salted butter

Method

  1. Whisk together the egg and milk in a medium-sized shallow bowl.
  2. Add the vanilla, sugar, and cinnamon and whisk until well incorporated.
  3. Place the bread slices, one or two at a time, into the egg mixture and flip to make sure both sides of the bread are well-coated. Let the bread soak for a minimum of 30 seconds to fully absorb the custard. 
  4. Melt the butter in a medium-sized skillet or griddle over medium heat.
  5. Place one or both slices of the bread into the skillet and cook slices until golden brown, then flip to cook the other side. Serve with syrup and/or powdered sugar.
