Water Witch’s Coconut Daiquiri

Water Witch is one of those bars that you wish was on every corner. Not only is the diminutive (aka cozy) watering hole staffed with some of the most talented mixologists in the West, but they are also some of the most friendly. No attitude.

And so, for someone like me – who doesn’t drink a lot of cocktails – Water Witch is a very comfy spot. The bartenders don’t treat me like an idiot for saying, “Can you recommend a rum drink for me to try?”

Which leads me to the Daiquiri of the Day. That’s a thing at Water Witch. There’s a special daiquiri featured everyday, and I recently enjoy one that I think was called a Coco Loco (or maybe I made the name up … I don’t quite remember, or perhaps I enjoyed too many daiquiris).

They are all made from scratch here, and in this case it a luscious blend of coconut liqueur, simple syrup, lime juice and rum shaken on ice until chilled and frothy. Now that’s a damned good daiquiri!
