A venerable California institution, the Wagner Family of Wines – currently operated by Chuck, Charlie, and Jenny Wagner – has a long and respected history of making wines in Napa Valley dating back to the 1850s. Some 45 years ago Chuck Wagner founded Caymus Vineyards with his mother and father, Lorna and Charlie Wagner. Today, Chuck, his older son Charlie, and older daughter Jenny are Wagner Family of Wine winemakers responsible for wines such as Mer Soleil Chardonnay, Conundrum, Red Schooner, and Emmolo, among others.

On Thursday, February 22nd, beginning at 6:30 pm, Spencer’s Steaks & Chops will host a Wagner Family of Wines Dinner priced at $150 per person.

The evening kicks off with Brie Canapé and Oysters with mignonette pearls paired with Emmolo Sauvignon Blanc 2022, followed by a course of Lobster Raviolo with salmon roe beurre blanc, paired with Mer Soleil SLH Reserve Chardonnay 2021. That course is followed by Yellowtail Mosaic Roulade with barbeque carrot puree, burnt honey-plum gastrique, pomme souffles, and vegetable melange paired with Sea Sun Pinot Noir 2021.

Two meat courses follow: Lamb Chops with onion caramel & pistachio crust paired with Caymus Suisun Grand Durif Petite Sirah 2019, and cassis-braised Bison Short Rib & wild mushroom tart with sunchoke puree and truffle port reduction.

The evening wraps up with Coffee & Tea Service: Blueberry Lemon Sorbet with candied lemon, macerated blueberries, gaufrette, and fresh mint.

Francis Fecteau, owner/founder of Libation Inc. will be on hand to discuss the wines and answer queries. Give Spencer’s a call at 801-238-4748 or email slccc_fb@hilton.com to reserve your spot.
