Shabu at 20

Congratulations to Shabu co-owners Bob and Keven Valaika, who celebrate Shabu’s 20th anniversary this year. The pan-Asian Park City eatery opened originally in February of 2004 in the Park City Mall on Main Street before moving across the street to their current location. When Shabu opened, the brothers Valaika offered guests what they called “Freestyle Asian Cuisine” and still do to this day.

Along with Mongolian-style shabu shabu, Shabu restaurant serves sushi and sashimi (Bob Valaika learned at the hands of Nobu Matsuhisa at Nobu in Aspen), hot pot dishes, killer saketinis, bao buns, ramen, and my favorite – the Wagyu beef cooked on a hot rock.

Here’s to another 20 great years of Shabu to look forward to!
