Kimi’s Chop & Oyster Makes a Move, Palomino Bar Opens in Park City, Shwe Letyar Sushi Opens at Woodbine

Kimi’s Chop & Oyster moves from Sugar House to Holladay. Palomino Bar is now open in Park City. And Shwe Letyar Sushi, orginally a Spice Kitchen Incubator project, is now open at Woodbine Food Hall.

Kimi’s Moves to Holladay

After enduring seemingly endless years of building and road construction, as well as a fire that impacted her independently owned business, Kimi Eklund has had enough of Sugar House. She has moved her namesake Kimi’s Chop & Oyster House to Holladay, in the location that was formerly home to Primo at 4699 S. Highland Drive. 

Kimi’s features a cuisine that ranges from fresh oysters, French brie en croute, and toast smögen to Swedish meatballs, steak frites, pan-seared yellowfin tuna, and Chop House buttermilk fried chicken.

Palomino Bar Opens in Park City

Palomino – “a spirited clubhouse” from Executive Chef Seth Adams and the folks at Riverhorse on Main in Park City – has opened. They describe Palomino as “the newest venue of the Riverhorse collection offers a refined bar scene of laid-back elegance, inviting friends – old and new – to gather in Park City’s new favorite watering hole.”

“Our dream of opening an upscale bar as part of our Riverhorse offerings has finally come to life, and we are excited to welcome the community to experience it for themselves,” says Executive Chef Seth Adams of Riverhorse Hospitality Group. “Palomino’s signature cocktails, beer, wine, and spirits menus, paired with our inventive bites and small plates, complement the perfect après outing, night on the town, or any reason to celebrate.”  

Artfully crafted menus include a variety of spirits, fine wines, artisanal beers, and signature cocktails such as the Lodge No. 7 of Rendezvous Rye, Carpano Antica, Luxardo, and espresso, The Seamstress of Alpine gin, fresh heirloom tomato juice, St. Germain, fire bitters, peppercorn, and housemade jerky, and The Gold Digger of Casamigos mezcal, Cointreau, lime, agave, and Veuve. 

Bar food offerings include a snack trio of marinated olives, Marcona almonds, and buffalo jerky, and other small plates of goat cheese pockets and smoked salmon potato pancakes. Seafood selections include oysters, caviar, sous vide lobster tail, and jumbo lump crab, along with shareable plates of French onion sliders, petite lobster rolls, buffalo quail bites, and caprese flatbread. Save room for decadent treats of key lime pie, a Palomino Cloud, or a Manhattan ice cream sandwich featuring High West ice cream and Ritual Chocolate cookies.  

Palomino is now open daily from 3 p.m. – midnight.

Shwe Letyar Sushi Opens at Woodbine

Shwe Letyar Sushi – originally a culinary project that was born at Spice Kitchen Incubator – has opened at Woodbine Food Hall

According to the owners, “Jadim Lahpai, originally an Asian immigrant from Myanmar, initially learned to cook rice alongside her mother when she was a young child. As she got older, her mother taught her how to make many more dishes to feed her family, including her five siblings. After lots of experimentation and practice to perfect her sushi-making skills, Jadim now wants to share her love of sushi with her customers. Shwe Letyar Sushi’s menu also offers some traditional Burmese dishes such as glutinous rice pyramids, samosas, and fermented tea leaf salad.”
