Solitude Mountain Aviation Cocktail

My favorite cocktail called Aviation. It’s a pretty, purplish-hued drink made with Beehive Jack Rabbit Gin, Luxardo Maraschino liqueur, Crème de Violette liqueur (the secret weapon), fresh squeezed lemon juice, and a piece of lemon peel floated on top.

During a recent visit to Solitude Mountain and dinner at the resort’s Honeycomb Grill (read about it here next week!), I enjoyed a delicious drink on the patio from the restaurant’s signature cocktail menu.

Among the signature cocktails at Honeycomb Grill are a Strawberry Rosé Margarita, an Aperol Spritz, and a Café & Tonic made with Captain Morgan Spiced Rum, simple syrup, cold brewed coffee and tonic with an orange peel garnish.

However, my favorite cocktail was called an Aviation. It’s a pretty, purplish-hued drink made with Beehive Jack Rabbit Gin, Luxardo Maraschino liqueur, Crème de Violette liqueur (the secret weapon), fresh squeezed lemon juice, and a piece of lemon peel floated on top.

It’s a very appealing cocktail and, here is a little secret: You know how in Utah restaurants that you have to have the “intent to order food” in order to be able to sip an alcoholic drink? Well, you certainly will want to enjoy brunch or dinner at Honeycomb Grill, but if you’re in the mood for a cocktail and not a lot of food, the restaurant offers an item on the menu that has you covered. It’s called “Intent to Dine” and it’s housemade savory trail mix for 2 bucks.

So, enjoy an Aviation cocktail and a snack or a full meal up at Solitude Mountain’s Honeycomb Grill. It’s a great way to escape the city heat and haze.
