I love everything about Ryan Miller’s beer philosophy. He’s the owner and founder of SaltFire Brewing Co. and it goes something like this: “In these days of near-certain apocalypse, we are the zymotic transcendentalists working on the edges of the event horizon, exploring the depths of the abyss for enlightenment and occult-worthy sustenance.” He adds that in pursuit of true craftsmanship, “we create beer with gritty experience and insurrectionary intelligence.”

SaltFire recently launched two very special barrel-aged beers that are currently available in the SaltFire bottle shop.

First up is the return of Jenivere, SaltFire’s gin barrel-aged IPA, which has gin-like notes of juniper berry along with grapefruit. This American-style IPA weighs in at 8% ABV. It’s not overly hoppy, and has a slightly sour character. I think the gin barrel-aging adds a depth to the beer that you wouldn’t normally expect in an IPA.

The other new brew is SaltFire’s annual release of Barrel Aged Imperial Dirty Chai Stout, a terrific beer for the holiday season. This Imperial Stout is 9.3% ABV. The dark – nearly black – beer is a brooding one with a creamy head and anise or fennel-like aromas. There’s whiskey flavor due to the barrel-aging, along with chocolate and cocoa notes on the palate and chai flavor that comes on pretty strong. It’s a very unique beer to spend some time with.

According to the folks at SaltFire, “Stay tuned for the release of the Barrel Aged Baltic Porter and Grievance.”
