Deer Valley’s Cast & Cut Reopens, New Menu at Manoli’s, Vintage Room Now Open

Cast & Cut opens a prix fixe all-you-can-eat experience, Manoli’s previews a winter menu, and The Vintage Room at St. Regis Deer Valley opens for its third season.

Cast & Cut Reopens at Deer Valley

Cast & Cut restaurant has reopened for the winter season at Deer Valley Resort and has done a reboot, of sorts. 

The restaurant opened last year as an a la carte steak and seafood fine dining restaurant, replacing the very popular Seafood Buffet at Deer Valley. Not all of Deer Valley’s dining guests loved the change, and voiced their opinions. So, this year Cast & Cut | Seafood Dining offers the best of both worlds. The dining experience is again a prix fixe all-you-can-eat affair, with grill and carving stations serving premium cuts of meat and a huge buffet of seafood such as succulent shrimp, oysters, crab, and mussels, as well as expertly prepared seafood such as blackened sea bass and poke, plus focused dishes including paella, pasta, stews, and more creative culinary expressions.

There’s also an array of decadent side dishes, artisanal breads, a bevy of desserts, and a full bar available to guests. Cast & Cut | Seafood Dining is open during the winter season Thursday through Sunday from 6 to 9:30 p.m. Reservations are required and can be made online at deervalley.com. New Winter Menu at Manoli’s

Manoli Katsanevas and his team at Manoli’s restaurant invite you to “Stop in and stay a while as you try the delicious new flavors added to our menu, designed exclusively for the season. We are excited to wine and dine you using the finest local and seasonal ingredients!”

Menu items include house agnolotti with roasted parsnip, mizithra brown butter, walnuts, allspice, and fried rosemary (Makaronia); pan-seared branzino with horta and pan-roasted lemon potatoes (Lavraki); baby romaine salad with white port golden raisins (Marouli); crispy chicken wings with lemon, olive oil & oregano (Kotopoulaki); roasted local mushrooms with hummus, seeded spice blend and pita bread (Manites), and more. In addition to the new menu, Manoli’s also has a new phone number: 801-656-7950. 

Vintage Room Open for 2024 Season

The Vintage Room at the St. Regis Deer Valley has officially opened for its third season. Located at The St. Regis Deer Valley, the 1600 square foot crystal clear heated Vintage Room is situated along Deer Hollow Run and can be easily accessed via skis or from the Resort’s Main Building via wooden walkway.  The Vintage Room can also be reached from the Resort’s funicular. 

At The Vintage Room, “Oysters are shucked behind a 30-foot wooden bar as expert mixologists serve signature cocktails and chefs prepare orders. Lounge and table seating are available, as are two raised VIP areas for a birds-eye view and great people watching. Food and libations can also be enjoyed at the outdoor deck and fire pit under the typically cornflower blue skies of Park City.  Enjoy lunch, après pre or post Sundance screenings, or as a respite from alpine endeavors!”

The Vintage Room menu by Executive Chef Pierson Shields “includes Caviar Chips Crème Fraîche; Pepper Seared Yellowfin Tuna Rice and Chili Bread Bowl; and the always popular Creamy Tomato Soup with Cheese Toast. Enjoy Champagne or libations from the Resort’s Winter Cocktail Menu such as the Belafonte, made with Ron Zacapa 23 and St. George Spiced Pear; the St. Regis Martinez using the just-released St. Regis Barrel Select Gin, Amaro Nonino and Carpano Antica; or the legendary 7452 Bloody Mary, named for the altitude of the Resort. The Resort’s Signature Beers include Cousin Jack and Main Street Mexican Lager and the Resort’s most popular cocktail, the 7452 Bloody Mary, named for the elevation of the Resort, are available.”
