Arugula Salad with Strawberries

We’ve got tons of arugula growing in our garden this summer, so we’ve been eating a lot of salads. Here’s a unique salad that contrasts sweet strawberries with peppery arugula.



  • 3 Tbsp Sherry or Prosecco vinegar
  • 1/2 tsp. granulated sugar
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp canola oil
  • 1/4 tsp. kosher salt, plus more for seasoning
  • 2 cups arugula leaves
  • 1 pint fresh strawberries, split lengthwise
  • poppy seeds


  1. In a large serving bowl, whisk together the sherry vinegar and sugar. 
  2. Whisk in the olive oil, canola oil and 1/4 teaspoon salt. Taste for seasoning.
  3. Toss the arugula leaves in the dressing.
  4. Add the strawberries and mix gently.
  5. Sprinkle the salad with poppy seeds and serve immediately.
