Yummy School lunches that are healthy and good to eat!

Let’s do lunch…at a Provo School District cafeteria! Whereas many school cafeterias are still mired in tater tots, Provo has created culinary concoctions that include rosemary chicken with sauteed mushrooms, roasted herb turkey, rice pilaf and watermelon popsicles.

“We wanted to serve fresh, homemade meals and we just got better and better at it. We make as much from scratch as possible.” said Jenlee McComb, child nutrition director. The district tries new menus regularly, and accepts that kids might take awhile to warm up to a warm meal. To promote success, the district partners with professional chefs to create ideas. Jenlee adds that kids also create the recipes for school lunch. One such tasty entree was Angelica’s Fiesta Salad with Tomatillo Dressing.

In addition to nutritious fare the Provo District champions the Buy Local movement. “We try to stay as local as possible,” Jenlee said. They buy from farms in Springville, Pleasant Grove and Draper. Both the ethic and the meals have helped the Provo District win Best in State Award for the past four years. Pass the popsicles! §
