Big South: A Taste of Southern Comfort 

When Damio Huddleston rolled out Big South in April 2021, he aimed to bring something new and exciting to the Salt Lake City food scene. 

“When people come to Big South, we want them to know they’re gonna leave with a heavy plate full of bomb food that you can’t get anywhere else,” he says. 

Passionate about cooking and driven by a love for feeding people, Huddleston quickly realized he had filled a hunger in Salt Lake customers with his array of Southern-inspired dishes — including his personal favorites of oxtail and Cajun pasta. “Don’t make us choose,” Huddleston jokes, and neither do his satiated customers who go out of their way to track down Big South and savor Soul Food Sunday offerings in particular.

Big South’s ability to bring the community together speaks volumes about Huddleston’s impact on Salt Lake’s food scene. 

“Food is my love language,” he says, smiling. “They don’t call it ‘Small Lake City’ for no reason, and we are truly grateful for the opportunity to serve Salt Lake the good food!”

Suzy Thai Food: Authentic Thai Flavors on Wheels

Since its launch in 2016, Suzy Thai Food has been delighting the Wasatch Front with authentic Thai cuisine, thanks to the passion and dedication of its owner, Suzy. The food truck’s success was evident from its second day of operation, recalls Suzy, when repeat customers from the first day flocked back for more, signaling a bright future ahead.

Suzy Thai Food began from a desire to “share Thai cuisine without Americanizing it,” Suzy explained. She planned to educate people about the richness of Thai cuisine through a diverse menu. However, due to popular demand, the truck had to adapt, offering consistent dishes to meet customer expectations. The menu now features a variety of delectable offerings, with the Massaman curry and mango sticky rice being Suzy’s personal favorites, and exemplifying the authentic flavors and quality she originally envisioned.

Among many memorable experiences, one of the craziest requests came from a client in Dubai who wanted to ship the entire truck overseas for a wedding. This ambitious plan would have involved setting up a kitchen in Dubai and committing a month to the event. Although the offer was lucrative, Suzy declined, prioritizing her loyal customers and existing commitments in Utah.

Skillets: A Breakfast Sensation 

In May 2021, Will and Jorge Garcia-Kesler hit the streets of Salt Lake City with their food truck, Skillets. The endeavor quickly became a fixture in the community, as the couple’s success was evident from the enthusiastic feedback and support they received from their customers.

The idea for Skillets came about as Will and Jorge, newly married at the pandemic’s onset, spent time together exploring their shared love for food. “Food was our thing and so we started work on Skillets,” aiming to bring delicious and hearty meals to the people of Salt Lake City, they said.

Among the many items on their menu, the breakfast burrito stands out as a highlight and was featured on Citycast. “We were blown away when they said our name as the best breakfast burrito in Salt Lake!” It’s a dish that has garnered rave reviews and, “has everything you want in a burrito and more, plus it comes with our delicious green sauce,” they explain. 

Skillets is open to the public all week and offers catering services for events. Will and Jorge cherish the time they spend with their customers and invite everyone to experience their top-rated breakfast offerings.

The Cluck Truck 

Phill and Gentry Davies launched The Cluck Truck in 2018, embarking on a culinary adventure that has since become a food truck staple around Salt Lake City. Initially, Gentry balanced her time between the food truck and a full-time real estate career. However, by 2019, the truck’s growing popularity prompted her to join full-time. 

The inspiration behind The Cluck Truck stemmed from Phill’s desire to create something of his own. Tired of working for others, he sought to build a business where he could channel his passion and work ethic. 

A must-try item on the menu for anyone visiting The Cluck Truck is one of Gentry’s personal favorites — Hot Chicken Fries. Start with a bed of Cajun red fries topped with ranch-slaw, then add spicy fried chicken brined for 24 hours and breaded with corn flakes and spices. Add buttermilk ranch and crinkle-cut pickles and you’ve got a meal to remember. 

The Davies’ journey hasn’t been without its challenges over the years. One memorable incident involved the truck breaking down en route to a dinner service. Undeterred, they towed it to the location with their pickup truck, ensuring they didn’t disappoint their clients.

The Cluck Truck’s schedule is regularly updated every Sunday on their social media @clucktruckutah, making it easy to find them for your next chicken fix. 

The Davies find great joy in making people feel special. “We enjoy being part of the community and being able to share a bit of ourselves with everyone who tries our food,” Gentry said.
