Duck Confit Tagliatelle

July 31, 2020 by Ted Scheffler Leave a Comment

There are few things I love more than duck confit. And, I also love pasta. So, I put the two together for this recipe: Tagliatelle with duck confit. It’s a winner.    Ingredients: 1-2 prepared duck confit legs ¼ cup duck fat or olive oil 1 shallot, peeled and minced 1-2 garlic cloves, peeled and minced 1 Tbsp. fresh rosemary leaves, minced 1 cup chicken or … [Read more...]

Greek-Style Pork Souvlaki Skewers

July 23, 2020 by Ted Scheffler Leave a Comment

I really love Greek-style pork souvlaki and this recipe is a great one for summer grilling. I suggest serving the souvlaki on pita bread with store bought tzatziki sauce or your favorite hot sauce. I confess to eating my souvlaki with Tabasco sauce.    Ingredients: 1 ½ lbs. boneless pork loin or tenderloin, cut into 1-inch cubes ⅓ cup fresh lemon juice ¼ cup olive … [Read more...]

One Pot Roasted Chicken

July 16, 2020 by Ted Scheffler Leave a Comment

This method of oven roasting a whole chicken in a well-sealed pot makes for an incredibly juicy, tender chicken with natural pan jus. It’s one of my favorite recipes.  Ingredients: 1 roasting chicken — 3 1/2 to 4 1/2 pounds 1/2 tsp cracked black pepper 2 tsp kosher salt 1 1/2 Tbsp. olive oil 1 celery stalk, roughly chopped 1 small carrot, roughly chopped … [Read more...]

Green Curry Beef Kebabs with Crispy Basil

July 3, 2020 by Ted Scheffler Leave a Comment

If you’re thinking about firing up the grill for this 4th of July, here is an Asian spin on beef kebabs with Thai-style green curry paste and crispy fried basil. Note that this recipe is for two servings of two skewers each. Simply increase the amounts for additional servings.  Ingredients: 1 lb. boneless beef such as tenderloin or ribeye, cut into bite-size pieces ¼ … [Read more...]

Corn & Black Bean Salsa Recipe

April 17, 2020 by Ted Scheffler Leave a Comment

One of my wife’s very favorite things to eat is Corn & Black Bean Salsa, which she usually buys at Harmons. However, it is very easy and inexpensive to make at home, and also tastes much fresher. Give it a try!  Ingredients: Fresh corn kernels from 2-3 ears of corn 1 Tbsp olive oil  1 tsp ground cumin  1 15-oz. can black beans, drained and rinsed  1 … [Read more...]

Penne with White Sausage Sauce

April 3, 2020 by Ted Scheffler Leave a Comment

Here is a quick and easy comfort food pasta dish which I modified a little from the original New York Times recipe by Mark Bittman. Here, pasta is coated in a sauce that’s much lighter than most tomato-based sausage sauces. I make this dish using hot Italian sausage but it’s also very good with turkey sausage.  Ingredients: 1 Tbsp butter 1 Tbsp olive oil 1 large … [Read more...]

Cod with Lemon-Butter Sauce

March 20, 2020 by Ted Scheffler Leave a Comment

Here is a really simple, but very tasty, recipe for fish fillets. You could use any white fish. I used cod here, but halibut would work well and so would catfish, grouper, haddock, pollock and others. I’ve also made this same recipe using peel and deveined shrimp. The fish is served here with brown rice-quinoa pilaf. Ingredients: 2 Tbsp olive oil 4 skinless cod … [Read more...]

Cajun Shrimp Stuffed Pasilla Peppers

March 13, 2020 by Ted Scheffler Leave a Comment

I really love all types of stuffed peppers, but especially Mexican peppers like pasillas, poblanos, Anaheims, etc. For this recipe - which is based on one on the Chili Pepper Madness website - I used pasilla peppers but you could use whatever type you prefer or can find. I made one serving each for my wife and me with this recipe. However, it makes enough stuffing for four … [Read more...]

Thai Drunken Noodles with Tofu Recipe

February 28, 2020 by Ted Scheffler Leave a Comment

There is no alcohol in “drunken” noodles, but there are countless variations on this delicious dish all over Thailand. It’s typically a very spicy dish and that’s the way I like it. However, you can control the heat level by using fewer spicy chilies or adding more if you like it hot. Use the widest rice noodles you can find for this recipe. I made Drunken Noodles this time … [Read more...]

Chicken Korma Ansari Recipe

February 21, 2020 by Ted Scheffler Leave a Comment

Aziz Ansari is one of my favorite actors/comedians. You might have seen him doing stand-up or in a show like Master of None or Parks and Recreation, among others. A couple of years ago I came across a family recipe (I don’t recall where) that Ansari shared - it’s his mother’s (Fatima Ansari) recipe for Chicken Korma and it’s terrific. This isn’t quite as “saucy” as typical … [Read more...]
