Vongole, in Italian, translates as clams. So, pasta alle vongole is simple pasta with clams. Monastrell is a thick-skinned red wine grape variety that usually produces smoky, deep, complex red wines. Known as Mourvedre in France, Monastrell is abundant in Central Spain.
