Epic Brewing Goes Bold with Brainless on Sake

Epic Brewing’s Brainless series just got a daring new twist. Aged in used sake barrels and infused with fruit, Brainless on Sake blends Belgian complexity with a dry, umami edge.

There have been lots of surprises to enjoy with Epic Brewing Company’s “Brainless” series of brews through the years. But maybe none is as unique as their newly released Brainless on Sake, a Brainless Belgian Ale brewed in used sake barrels.

Here is what the brewers at Epic had to say about it. “In celebration of spring, Epic Brewing is releasing Brainless on Sake—a unique twist on our classic Brainless Belgian Ale. This edition is aged 100% in used sake barrels and infused with plum, black currant, and blackberries. The sake barrels present subtle notes of dry umami and oak while the fruits create a beautiful purple hue. This brew comes in at 8.5% ABV.”

“Since Epic opened in 2009 the Brainless Series has been some of the breweries’ most favorite and unique offerings. Brainless on Peaches is still one of the most complex and innovative brews that Epic has to offer, and every release of Brainless Raspberries is unique with its sweet tart notes. Brainless on Sake is a fantastic addition to the series.”

  • Utah Craft Whiskey: How Barrels and Utah’s Climate Shape Flavor

Utah’s craft whiskey scene is shaped by more than grain, yeast, and time. The state’s dry climate plays an unusually powerful role in how spirits age, intensifying the relationship between whiskey and the barrels that hold it.

Low humidity accelerates evaporation during aging, often claiming 14–18 percent of a barrel’s contents as the “angel’s share.” Unlike more humid regions where alcohol evaporates faster, Utah barrels tend to lose more water, concentrating flavor and driving proof upward over time. That accelerated interaction pulls sugars, tannins, and spice from the wood more quickly, creating whiskeys that often taste older and more structured than their age statements suggest.

To understand how Utah distillers are deliberately harnessing climate, char, and finishing barrels to shape flavor, two producers at the forefront of that experimentation — Sugar House Distillery and Spirits of the Wasatch — shared how barrel choices influence everything from sweetness and spice to texture and proof.
