I never expected a bottle of wine to hijack my evening. But that’s exactly what happened.

My husband went to St. George, supposedly on a business trip, but somehow ended up wandering all over Southern Utah. Along the way, he stumbled upon Water Canyon Winery and, as a result, came home with a bottle of 2023 Petite Sirah. I didn’t think much of it at the time, just another bottle among many. It sat on the shelf, unassuming, until dear friends came over for dinner.

One of them, a steadfast red wine enthusiast, reached for a glass, and I figured I’d open it for her. The moment I twisted the cap, a deep, rich aroma filled the air: dark berries, something a little earthy, and a hint of spice. It was bold, inviting, and completely unexpected.

I had been planning on margaritas that evening—refreshing, tart, easy—but suddenly, they seemed irrelevant. This wine demanded to be poured, sipped, and enjoyed.

In the glass, it was a deep, almost inky purple, catching the light in a way that hinted at its richness. The first sip was smooth but full of character, dark fruit, a little bit of spice, and just enough structure to keep it interesting. It wasn’t overly heavy, but it had depth, the kind of wine that lingers both in the glass and in conversation.

By the end of the night, the bottle was empty, the laughter still going, and my husband, who had unknowingly stumbled upon something special, was looking rather pleased with himself.

Water Canyon Winery, located in Hildale, Utah, is the creation of Shane and Kalie Tooke, a husband-and-wife team who have been making wine together for over six years. They established their vineyard in 2018, guided by a passion for natural winemaking. Their philosophy is simple: let the grapes speak for themselves. They ferment with native yeasts and use no sulfites or preservatives, allowing the fruit to develop its full character without intervention.

The result? Wines that feel unfiltered, expressive, and deeply tied to the rugged Utah landscape.

This 2023 Petite Sirah wasn’t just a bottle of wine. It became part of the evening, part of the conversation, and something I’ll gladly pour again.
