Salt Lake City’s Kiitos Brewing has introduced a groundbreaking beer made entirely from Fonio, an ancient West African grain. While other breweries have incorporated Fonio into their beers, Kiitos’ version is the first in the U.S. to use it exclusively. The debut batch sold out quickly, but more is on the way.

Described as light, crisp, and refreshing with notes of Asian pear and lychee, Kiitos Fonio is gluten-free and has a 5.0% ABV. It drinks more like a seltzer than a traditional beer, making it a unique addition to the craft beer scene.

In other news, Kiitos is expanding with a new location in Sugarhouse, set to open in late April or early May. To accelerate the project, the brewery is inviting fans to support the expansion through a gift card program—offering a $120 gift card for a $100 contribution. The funds will help finalize equipment purchases and design elements for the new space while also supporting improvements at the current Granary location.
