Tracy Aviary Hosts Wine Tasting: Non-Alcoholic vs. Traditional Wines (Jan 23, 2025)

Can non-alcoholic wines rival traditional ones? Tracy Aviary’s Wine Takes Flight offers a blind tasting experience, featuring sparkling, crisp white, and rich red wines paired with gourmet bites

On January 23, 2025 Tracy Aviary in partnership with Eat Drink SLC will host their January edition of “Wine Takes Flight” hosted by Jim Santangelo, owner and Sommelier of the Wine Academy of Utah. The event takes place at the Chase Mill from 6 pm to 7:30 pm. Guests must be 21 years or older to attend.

Wine Takes Flight this month features over six different wine selections comparing Non-Alcoholic Wines versus Traditional Wines. In this side-by-side “blind tasting” you become the judge! Will you be able to decide which is which?

Wine Takes Flight includes three beverages, a special arrival pour, and food pairings sponsored by Beehive Cheese.

The folks at Tracy Aviary said, “We will be featuring sparkling, crisp white, and rich red wines; this is a great event for those who don’t drink to feature non-alcoholic wines at your next gathering. All while raising a glass to the birds at Tracy Aviary!”

Tickets are $55 per person and may be purchased via the Tracy Aviary website.

  • Utah Craft Whiskey: How Barrels and Utah’s Climate Shape Flavor

Utah’s craft whiskey scene is shaped by more than grain, yeast, and time. The state’s dry climate plays an unusually powerful role in how spirits age, intensifying the relationship between whiskey and the barrels that hold it.

Low humidity accelerates evaporation during aging, often claiming 14–18 percent of a barrel’s contents as the “angel’s share.” Unlike more humid regions where alcohol evaporates faster, Utah barrels tend to lose more water, concentrating flavor and driving proof upward over time. That accelerated interaction pulls sugars, tannins, and spice from the wood more quickly, creating whiskeys that often taste older and more structured than their age statements suggest.

To understand how Utah distillers are deliberately harnessing climate, char, and finishing barrels to shape flavor, two producers at the forefront of that experimentation — Sugar House Distillery and Spirits of the Wasatch — shared how barrel choices influence everything from sweetness and spice to texture and proof.
