On Thursday, October 10, 2024 beginning at 6:00 pm, Tupelo in Park City will host a special Midwinter Night’s Dram Dinner featuring a four course dinner celebrating High West Distillery’s A Midwinter Night’s Dram. In addition to Chef/Owner Matt Harris’ world class cuisine, the evening will feature a welcome cocktail, vertical flights of Dram (Acts 10, 11, & the highly anticipated Act 12), and The Prisoner’s Share.

The first course will be Tupelo Farm Beets, Cured Utah Peaches, Grapefruit, Smoked Pecans, Ginger Brandy Vinaigrette, Goat Cheese (GF); Pairing: A Midwinter Night’s Dram, Act 10. 

Course #2 is Course: Cocoa Chili Spiced Utah Elk Carpaccio, Preserved Plum, Sourdough, Miso Mustard (GF OPTION); Pairing: A Midwinter Night’s Dram, Act 11

Third course: Mishima Farm’s Wagyu Beef, Braised Carrots, Golden Potatoes, Cranberries (GF); Pairing: A Midwinter Night’s Dram, Act 12

Dessert for the fourth course will be Honey Roasted Figs, Black Pepper Pound Cake, Blood Orange Caramel (GF OPTION); Pairing: The Prisoner’s Share

    Utah’s craft whiskey scene is shaped by more than grain, yeast, and time. The state’s dry climate plays an unusually powerful role in how spirits age, intensifying the relationship between whiskey and the barrels that hold it.

    Low humidity accelerates evaporation during aging, often claiming 14–18 percent of a barrel’s contents as the “angel’s share.” Unlike more humid regions where alcohol evaporates faster, Utah barrels tend to lose more water, concentrating flavor and driving proof upward over time. That accelerated interaction pulls sugars, tannins, and spice from the wood more quickly, creating whiskeys that often taste older and more structured than their age statements suggest.
