One of my favorite American wineries is DAOU Vineyards & Winery, located in Paso Robles, California. Their award-winning world class wines are stupendous. On Sunday, August 25th starting at 6:00 pm, Franck’s restaurant will host a special wine-pairing dinner featuring some of the great wines from DAOU Vineyards & Winery.

The evening begins with a First Course of Watermelon Plank/Rose-watermelon Leche de Tigre/salt-cured olive/prosciutto XO/St. Andre triple cream cheese and aromatic herbs, paired with DAOU Rosé.

Course Two is Unilateral Seared Amberjack/vanilla bean & black tea beurre/hazelnut “charcoal”/umami leeks/red onion condiment/honey-cured amberjack tartare, paired with DAOU Reserve Chardonnay.

The Third Course is Charred Fatty Niman Pork Ribs/blackberry truffle glaze/Utah oyster mushroom salad/fermented blackberry/and spruce tip chili crunch, paired with DAOU Bodyguard.

Course #Four is 118 Degree Imperial Wagyu Beef Rump Cap/many roots, Wagyu fat espresso jus/root top chimichurri/acrated savory carrot cake/and gorgonzola dulce, paired with DAOU Reserve Cabernet.

The DAOU winner dinner wraps up with a dessert of Chocolate Cherry Mille Feuille/cured Utah cherries/tobacco & vanilla cream, paired with DAOU Cabernet Soul of a Lion.

The cost for the DAOU wine pairing dinner at Franck’s is $130 per person for food and wine pairings or $110 for food only.
