SMALL PLATES, BIG FLAVORS A Scrumptious Visit to Eva

January 27, 2023 by Ted Scheffler Leave a Comment

Before attending a show at the Eccles Theater in downtown SLC recently, my wife and I popped into one of our favorite neighborhood bistros for a bite to eat: Eva. Named for his great grandmother, Eva Coombs, Chef/Owner Charlie Perry opened Eva in early 2009 and it’s been a popular downtown dine-and-drink spot since Day 1. Perry has said that his passion for organic foods and … [Read more...]

So many, in fact, I wonder how Michael gets all those powder days in skiing up at Alta?  Upcoming Two Old Guys performances include Flanagan’s on Main in Park City (02/01), … [Read more...]

Duck Fat Bucatini Carbonara

January 27, 2023 by Ted Scheffler Leave a Comment

When I make pasta carbonara, I normally begin the sauce by sizzling bacon bits in olive oil. However, it occurred to me recently that using duck fat in place of some of the oil would kick up my carbonara considerably, and I was right. I urge you to try this hack to improve your pasta carbonara at home. In addition, it might sound strange but I found that using Niman Ranch … [Read more...]

Santa Giustina Barbera Colli Piacentini

January 27, 2023 by Ted Scheffler Leave a Comment

In this week’s Scheff’s Table column, I featured my recipe for pasta carbonara made with duck fat. It’s a deliciously decadent dish. Pairing wine with carbonara sauce can be tricky due to the creaminess of the sauce, smoky bacon, and salty cheese flavors. So I usually turn to a fruity, low-tannin red wine with a touch of acidity to cut through those creamy, cheesy, salty and … [Read more...]

January 24, 2023 by Angelika Brewer Leave a Comment

Contentious Mining Plan Still Under Review Parley’s Canyon and the Wasatch Mountains are at the forefront of a controversial debate about whether or not a proposed limestone quarry should move forward. Seemingly, the opinions surrounding the plan are overwhelmingly negative, even prompting a petition called “Save Parley’s Canyon.” Carl Fisher, a respondent from “Save Our … [Read more...]

With the Sundance Film Festival rolling into Utah this week, I thought I’d turn my attention to some of my favorite movies about food - there’s a smorgasbord of them to delight in for the hungry filmgoer.  My very favorite food-themed film was one that I originally saw at the Sundance Film Festival. Big Night won the Grand Jury Dramatic Prize at Sundance in 1996 and … [Read more...]

Easy Pork Carnitas

January 20, 2023 by Ted Scheffler Leave a Comment

I really love carnitas, which are especially popular in the Mexican state of Michoacan. It’s pork cooked in orange juice and other ingredients, usually served in tacos or burritos. You can make the carnitas in advance and then freeze or refrigerate them to use at your leisure. I like leftover carnitas with scrambled eggs, for example.  Ingredients: 2 lbs. boneless pork … [Read more...]

Here are some options that - as far as I can tell - do not require a ticket, pass or invitation. Of course, there are also plenty of … [Read more...]
